Mustard Chicken

Chicken breast is my go-to protein. We eat it multiple times a week so I am always trying to find new ways to prepare it so that it doesn’t get boring! Luckily, chicken is extremely versatile and you can pretty much do anything with it.

This mustard chicken is full of flavor and keeps you wanting more. The great thing is that it’s healthy so go ahead and have another piece of that delicious mustard chicken!

I love eating this chicken with sauteed spinach. It is the perfect healthy side.

Here’s how I made the spinach:

Ingredients

  1. 3 tbsp of butter or ghee for Whole30
  2. 1 tbsp of minced garlic
  3. 11 oz container of fresh spinach
  4. Salt and pepper
  5. Juice from small lemon

Instructions

  1. Heat butter or ghee in a large saute pan.
  2. Once the butter is melted, add 1 tbsp of garlic to the pan and cook for about a minute.
  3. Next add about half of the of the spinach to the pan and saute until the spinach is wilted.
  4. Add the remainder of the spinach to the pan and cook until wilted.
  5. Once all of the spinach is wilted, season with salt and pepper to taste.
  6. Lastly, squeeze lemon juice over the spinach and serve.

Mustard Chicken

Ingredients
  

  • 3 Chicken Breast
  • 2 tbsp of avocado oil
  • 2 garlic cloves, minced
  • 1 cup of bone broth
  • 2 tbsp mustard
  • 1/2 cup of almond milk
  • salt and pepper

Instructions
 

  • Using your knife, slice each chicken breast through lengthwise from the thick end all the way to the thin end to create two chicken cutlets. You should have 6 when finished with this step.
  • Heat skillet over medium-high heat and add avocado oil. Season both sides of chicken with salt and pepper. Once oil is hot, add chicken to skillet and sear on both sides until chicken is cooked through, about 4 minutes per side. Once chicken is fully cooked, remove from skillet and set aside.
  • Add garlic to the skillet. Cook for about a minute. Next, add bone broth and simmer until broth thickens and reduces by half, about 7 to 8 minutes.
  • Once broth has thickened, add mustard and combine. Next, add almond milk. Taste your sauce to make sure it is flavorful, add salt and pepper if necessary.
  • Lastly, add the chicken back in the skillet and make sure chicken is coated with sauce. 
  • Serve and enjoy!!
