Chorizo Street Tacos

These Chorizo Steet Tacos are packed with so much flavor and can be cooked in about 15 minutes, which makes this one of the fastest and easiest dinners. Using corn tortillas, which is traditional for street tacos, makes these naturally gluten-free.

Tacos are one of my ultimate favorite foods! My mom made them for me all the time growing up, and now I make them for my family. Usually, if my mom added chorizo to our tacos, it was in combination with shredded chicken. But lately I have been obbsessed with the inense flavor of chorizo. But if is too strong or too greasy for you, cook some shreeded chicken or thinly sliced steak with the chorizo and they will be extremely delicous!

Chorizo Street Tacos Ingredients

  • Small corn tortillas (may want to use 2 tortillas per taco due to grease)
  • Pork Chorizo
  • Onions
  • Cilantro
  • Cotija cheese

How to Make Chorizo Street Tacos

  • Step one: Cook chorizo in a medium-sized pan over medium heat until browned, about 5 minutes. 
  • Step two: Warm tortillas directly over the gas flame on stove for about 20 to 30 seconds or until tortilla is charred to your liking. You can do one at a time or do two at a time and heat on both sides. If you do not have a gas stove, you can warm the tortillas in a skillet for the same amount of time.
  • Step three: Use one to two tortillas per tacos. The chorizo is greasy so using two tortillas per taco will help prevent the taco from ripping from the grease.
  • Step four: Using a slotted spoon to drain some of the grease, add desired amount of chorizo to a warmed tortilla. Garnish with chopped onion and cilantro. Repeat this step for the remaining tacos.
  • Step five: Lastly, top taco with cotija cheese if desired.
  • Step six: Enjoy!
