Cut cabbage in half. Place cabbage cut side down and slice thinly around the core. Discard core.
Heat a large saute pan over medium heat and add bacon once pan is hot. Cook bacon until crispy. Once crispy, transfer bacon to a plate lined with a paper towel and set aside. Be sure to leave the bacon grease in the pan.
Add 2 tablespoons of butter (or ghee) to the bacon grease and melt. Once butter is melted, add cabbage. Mix cabbage in with the grease and butter. Cover the cabbage and cook for about 15 minutes, stirring the cabbage about every 3 minutes. Covering the cabbage will help it get super tender.
Once cabbage is soft, season with salt and pepper to taste, crumble crispy bacon over the top and serve.
