Chicken, Brussels Sprouts, and Apple Sheet Pan

Ingredients
  

  • 4 chicken thighs, bone-in and skin on
  • 1 & 1/2 tbsp of avocado oil, divided
  • 1/2 tsp of granulated garlic
  • 1/2 tsp of granulated onion
  • 2 10 oz packs of Brussels sprouts
  • 5 pieces of bacon, cut into lardons (make sure compliant if doing Whole)
  • 3 Gala apples, seeded and cubed
  • salt and pepper

Instructions
 

  • Preheat oven to 425 degrees Farenheit.
  • Trim ends off of Brussels sprouts and remove any yellow leaves. Cut Brussels sprouts lengthwise down the middle. Place Brussels sprouts on sheet pan and drizzle a 1/2 tbsp of avocado oil over Brussels sprouts and season with salt and pepper to taste. Toss Brussels sprouts to ensure they are evenly coated. Add bacon lardons to sheet pan with brussels sprouts.
  • Next, add chicken thighs to a medium-sized bowl with 1 tbsp of avocado oil, granualted garlic, granulated onion, and salt and pepper to taste. Toss chicken to ensure it is evenly coated with oil and seasoning. Add chicken to sheet pan with Brussels sprouts and bacon.
  • Add sheet pan to preheated oven and bake for 20 minutes.
  • After 20 minutes, remove sheet pan from oven and add cubed apples. Using a spatatuala, toss apples with Brussels sprouts and bacon. Place sheet pan back into the oven and bake for another 25-30 minutes, or until chicken skin is cripsy and cooked through.
  • Serve and enjoy!
