Pan-Seared Brussels Sprouts with Bacon, Capers, and Lemon

Ingredients
  

  • 1 1lb of Brussels sprouts
  • 4 pieces of bacon
  • 2 tbsp of capers
  • 1/2 of lemon
  • salt and pepper to taste

Instructions
 

  • Bring about 2 to 3 cups of water to a boil in a medium saucepan over high heat.
  • Meanwhile, trim ends off of Brussels sprouts and remove any yellow leaves. Cut Brussels sprouts lengthwise down the middle.
  • Add Brussels sprouts to lightly boiling water and cook until tender, about 4 minutes.
  • While Brussels sprouts are boiling, add bacon to a skillet over medium heat and cook until crispy. Remove bacon fro skillet and add to a paper towel-lined plate and set aside, leaving bacon drippings in skillet.
  • Once Brussels sprouts are tender, drain and add to bacon grease. Sear untouched on one side for about 3 minutes. Flip Brussels sprouts over and add capers and lemon juice from half a lemon. Season with salt and pepper to taste. Continue to cook for another few minutes. Add crumbled crispy bacon and serve.
