Shrimp and Zucchini Sheet Pan

Ingredients
  

  • 1 lb of shrimp, peeled and deveined
  • 2 medium zucchinis, sliced
  • 1/4 cup of ghee (clarified butter)
  • 2 cloves of garlic, minced
  • Juice of a small lemon
  • 2 tbsp of capers
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • Add melted ghee, garlic, and lemon juice to a small mixing bowl and combine.
  • Next, add shrimp and zucchini to sheet pan. 
  • Drizzle lemon and ghee sauce over shrimp and zucchini and massage to ensure everything is evenly coated with sauce. 
  • Season with salt and pepper to taste.
  • Lastly, sprinkle capers over shrimp and zucchini and place in oven. Roast for 10 minutes. Serve and enjoy!
