Shrimp and Zucchini Sheet Pan

This has to be the easiest and tastiest meal to make ever!! As a full-time working mom, I need meals that do not take too much effort to make but that are also full of nutrients and flavor. This is one of those meals!!

Shrimp and Zucchini Sheet Pan

Ingredients
  

  • 1 lb of shrimp, peeled and deveined
  • 2 medium zucchinis, sliced
  • 1/4 cup of ghee (clarified butter)
  • 2 cloves of garlic, minced
  • Juice of a small lemon
  • 2 tbsp of capers
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • Add melted ghee, garlic, and lemon juice to a small mixing bowl and combine.
  • Next, add shrimp and zucchini to sheet pan. 
  • Drizzle lemon and ghee sauce over shrimp and zucchini and massage to ensure everything is evenly coated with sauce. 
  • Season with salt and pepper to taste.
  • Lastly, sprinkle capers over shrimp and zucchini and place in oven. Roast for 10 minutes. Serve and enjoy!
