Chicken No-Tortilla Soup

As a full-time working mom, I am always trying to find easy meals to make that are full nutrient-dense foods to feed my family.

This Chicken No-Tortilla Soup checks all the boxes! It’s easy, it’s nutritious, and it’s absolutely delicious!! It’s also Keto and Whole30 compliant.

I like to garnish with avocado and sprinkle of lime.

If you are living in your food freedom, add in some tortillas and I gurantee you it will be the the most delicious Chicken Tortilla Soup you’ve ever tasted!

Chicken No-Tortilla Soup

Ingredients
  

  • 6 chicken thighs
  • Salt and pepper
  • 1 tbsp olive oil
  • 1 medium onion
  • 3 cloves of garlic
  • 1 14 oz can of diced tomatoes
  • 4 cups of chicken stock
  • 1 tsp of granulated garlic
  • 1 tsp of granulated onion
  • 1 tsp of cumin
  • Handful of cilantro, chopped

Instructions
 

  • Add chicken to slow cooker and season with salt and pepper to taste.
  • Add olive oil to a medium pan over medium heat. Add onions and sauté for about 3 minutes. Next, add garlic and sauté for an additional two mixtures.
  • Pour onion and garlic into the slow cooker. Next, add tomatoes, chicken stock, granulated garlic, granulated onion, and cumin to the slow cooker and stir to combine.
  • Cover and cook on high for 4 hours.
  • Once soup has finished cooking, add in cilantro.
