This Chicken No-Tortilla Soup checks all the boxes! It’s easy, it’s nutritious, and it’s absolutely delicious!! It’s also Keto and Whole30 compliant.
I like to garnish with avocado and sprinkle of lime.
If you are living in your food freedom, add in some tortillas and I gurantee you it will be the the most delicious Chicken Tortilla Soup you’ve ever tasted!
Chicken No-Tortilla Soup
Ingredients
- 6 chicken thighs
- Salt and pepper
- 1 tbsp olive oil
- 1 medium onion
- 3 cloves of garlic
- 1 14 oz can of diced tomatoes
- 4 cups of chicken stock
- 1 tsp of granulated garlic
- 1 tsp of granulated onion
- 1 tsp of cumin
- Handful of cilantro, chopped
Instructions
- Add chicken to slow cooker and season with salt and pepper to taste.
- Add olive oil to a medium pan over medium heat. Add onions and sauté for about 3 minutes. Next, add garlic and sauté for an additional two mixtures.
- Pour onion and garlic into the slow cooker. Next, add tomatoes, chicken stock, granulated garlic, granulated onion, and cumin to the slow cooker and stir to combine.
- Cover and cook on high for 4 hours.
- Once soup has finished cooking, add in cilantro.
