Add chicken to slow cooker and season with salt and pepper to taste.
Add olive oil to a medium pan over medium heat. Add onions and sauté for about 3 minutes. Next, add garlic and sauté for an additional two mixtures.
Pour onion and garlic into the slow cooker. Next, add tomatoes, chicken stock, granulated garlic, granulated onion, and cumin to the slow cooker and stir to combine.
Cover and cook on high for 4 hours.
Once soup has finished cooking, add in cilantro.
