Whole30 & Keto Chili

Raise your hand if you love chili? I know I do! I grew up eating my mom’s chili, which included beans, and it was and still is the best chili ever. We would eat it with rice or flour tortillas and it always was the shining star at every family function.

Because of my love for chili, I decided to make an equality delicious Whole30 and Keto version so I do not have to feel like I am missing out when I am eating healthy, and this definietly hits the spot.

I know there is a great debate on whether to add or not to add beans to your chili. Honestly, I think you it is a win win either way. If you are one who prefers beans in your chili, I guarantee you will not be miss the beans in this delicious bean-less version .

Whole30 & Keto Chili

Ingredients
  

  • 2 lbs ground beef (I used 85/15)
  • Salt and pepper to taste
  • 1/2 lb chorizo (make sure compliant for Whole30)
  • 1 4.5 oz can of mild chopped green chilis
  • 1 15 oz can of tomato sauce
  • 1 cup beef stock or water
  • 1 tbsp of chili powder
  • 1 tbsp of cumin
  • 1 tsp chipotle chili powder
  • 1 tbsp granulated garlic
  • 1 tbsp granulated onion
  • 1/4 cup of coconut aminos

Instructions
 

Slow Cooker Instructions

  • Add ground beef to a sauce pan on medium high heat and season with salt and pepper.
  • Cook ground beef until browned. Drain any excess fat.
  • Once fat is drained, add beef back into the pan. Add chorizo and cook for about 5 minutes.
  • Add meat mixture to slow cooker. Next, add chilis, tomato sauce, beef stock or water, chili powder, cumin, chipotle chili powder, granulated garlic, granulated onion and coconut aminos and stir to combine.
  • Cover and cook on high for 4 hours.
  • Garnish with you favorite chili toppings!
    For Whole30: onion, bell pepper, avocado, and black olives.
    For Keto: onion, avocado, sour cream, and cheese.

Stove Top Instructions

  • Add ground beef to a sauce pan on medium high heat and season with salt and pepper.
  • Cook ground beef until browned. Drain any excess fat.
  • Once fat is drained, add beef back into the pan. Add chorizo and cook for about 5 minutes.
  • Next, add chilis, tomato sauce, beef stock or water, chili powder, cumin, chipotle chili powder, granulated garlic, granulated onion and coconut aminos and stir to combine.
  • Cover and cook for at least 30 minutes, stirring occasionally. 
  • Garnish with you favorite chili toppings!
    For Whole30: onion, bell pepper, avocado, and black olives.
    For Keto: onion, avocado, sour cream, and cheese.
