Fish and Vegetable Foil Packets

I have always loved my fish cooked in a foil packet with butter, garlic, onions and bell peppers because the vegetables add so much delicious flavor to the fish. Now don’t get me wrong, I also love my fish seared on the stove with garlic and butter because that crust also equals so much flavor. But when I want a fast and healthy dinner that I don’t really have to think about, these foil packets are my go-to!

The great thing about these is that they can be cooked in the oven or on the grill, which makes them perfect for summer. They also can be prepped in advanced and stored in the refrigerator until you are ready to cook, which makes meal prep really easy.

Fish and Vegetable Foil Packers

Ingredients
  

  • 4 white fish fillets (I like halibut and cod. If using salmon , cooking time may be a little longer))
  • 2 zucchinis, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 of large red or white onion, thinly sliced
  • 4 cloves of garlic, thinly sliced
  • 2 lemons, halved
  • 4 tbsp of butter (or ghee for Whole30)
  • olive oil
  • salt an pepper
  • heavy duty aluminium foil

Instructions
 

  • Preheat oven to 400 degrees.
  • Season both sides of fish with salt and pepper and set aside. 
  • Cut four 20 inch long pieces of of aluminium foil. Evenly divide the zucchini, onion and bell pepper and place in the center of each piece of foil. Drizzle a little olive oil over the vegetables and season with salt and pepper.
  • Top each vegetable pile with a piece of seasoned fish. Drizzle fresh squeezed lemon juice from half a lemon over each piece of fish. Add sliced garlic to each foil pack and then cover each piece of fish with a tablespoon of sliced butter (or tablespoon of ghee for Whole30).
  • To seal the foil packets, fold the long ends of the foil over the center of the fish (as if you were wrapping a present). Next , fold the short ends of the foil forward and seal, Be sure not fold foil too tightly because you want ensure there is enough room for the steam to move around while cooking.
  • Place foil packets on a sheet pan and bake in a preheated oven for 12 to 15 minutes, or until fish is flakey. If grilling, place packets directly on grill and cook for about 10 minutes.
  • Once fish is cooked, remove from oven. Be careful when opening the foil packets after you’ve removed them from the oven; the steam will escape and you do not want get burned.
