Fruit and Nut Chicken Salad

This Fruit and Nut Chicken Salad is quickly becoming one of my favorite summer meals. The chicken is tender, the fruit is perfectly sweet and the pecans add just the right amount of crunch. It is definitely a must try!

If making this Whole30 compliant, read your labels to ensure your mayo and cranberries are compliant. When on Whole30, I like to serve this over a bed a of fresh spinach. If not on Whole30, I like to eat this delicious chicken salad with a piece of gluten-free bread.

One thing I want to note is that I am not a very big fan of mayo so I add as little as possible. Please make it your own and add as much or as little as you’d like.

Fruit and Nut Chicken Salad

Ingredients
  

  • 3 cups chicken breast, cut into bite size pieces I usually use my slow cooker shredded chicken to make this
  • 1/2 cup of mayo
  • 1/2 of green apple, cubed into bite sized pieces
  • 1/2 cup of red grapes, sliced
  • 1/2 cup of raw pecan pieces
  • 1/4 cup of dried cranberries
  • 1/4 of onion, diced
  • salt and pepper to taste

Instructions
 

  • Add chicken and mayo to a medium sized bowl and combine. Taste chicken mixture and season with desired amount of salt and pepper.
  • Next, add apples, grapes, pecans, cranberries, and onions to chicken and combine.
  • Serve over a bed of fresh spinach or over bread.

  1. I made this with Whole 30 compliant mayo and cranberries. It is so delicious (pun intended), light and easy to make. I will be adding this to my regular lunch rotation, Whole 30 or not.
