One-Pot Cheesy Chicken, Broccoli and Rice

I love a one-pot meal! Especially because I hate doing dishes. I also love when I can feed me and my husband the same meal as my one and two-year-old daughters. It just makes my life so much easier! This One-Pot Cheesy Chicken, Broccoli and Rice is an easy and nutritious meal that the entire family will love. Be sure to give it a try!

One-Pot Cheesy Chicken Broccoli and Rice

Ingredients
  

  • 2 tbsp of olive oil
  • 1 to 1 1/2 lbs of chicken breast, cut into 1 inch cubes
  • salt and pepper
  • 1 cup of extra long enriched rice
  • 1 tsp of granulated garlic
  • 1 tsp of granulated onion
  • 2 1/2 cups of bone broth or chicken stock
  • 1 head of broccoli, chopped into florets (about 3 cups)
  • 2 1/2 cups of shredded cheddar cheese

Instructions
 

  • Add 2 tablespoons of olive oil to a large saucepan over medium-high heat. Season chicken with salt and pepper. 
  • Once oil is hot, add chicken to saucepan and cook on one side for 3 minutes. Next, flip chicken and cook on the other side for about 2 minutes. Remove chicken from saucepan and add to a plate and set aside (don’t worry if chicken is not done at this point).
  • Add rice to saucepan and toast in the remaining oil and juices from chicken. Add granulated garlic and granulated onion to rice and continue to toast for about 2 to 3 minutes.
  • Add the chicken back to saucepan and combine with rice. Add chicken broth or stock to saucepan and bring to a boil. Reduce cover saucepan and reduce heat to low. After about 10 to 12 minutes, add broccoli to sauce pan and stir in with chicken and rice. Cover the saucepan and cook for an additional 10 minutes. 
  • Preheat broiler.
  • Once rice and broccoli have softened, turn heat off and stir in 1 cup of cheese to chicken, rice, and broccoli mixture. Top the mixture with the remaining cheese. 
  • Add saucepan to oven and broil until the cheese has melted, about 3-5 minutes. Watch carefully–the cheese can go from bubbling to burnt in the matter of seconds. If you do want to use the broiler, add cheese and cover the saucepan for about 2 minutes for cheese to melt.

  1. Made this for my family. So easy and delicious! Everyone loved it. I didn’t have rice so I added cauliflower rice at the end.
