Roasted Garlic Butter Shrimp

I was a very greedy kid growing up so my favorite time of the day was definitely when my mom would make dinner. One thing I used to love that she would make was shrimp scampi! We would eat it with rice and veggies and it was so delicious that I always went back to for seconds.

This simple and easy Roasted Garlic Butter Shrimp has the same delicious flavor as shrimp scampi and takes about 15 minutes from the time you start prepping to the time the shrimp it is on your plate.

These days I am trying to control my portions and be conscious about my carbs, so I am eating this delicious shrimp over a bed of kale salad (pictured below). You can pair with your favorite vegetable, pasta, or eat it my absolute favorite way, over rice!

Roasted Garlic Butter Shrimp

Ingredients
  

  • 1 lb peeled and deveined shrimp, thawed
  • 2 tbsp of clarified butter
  • 2 garlic cloves, thinly sliced
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • Lay shrimp on a baking sheet and massage with clarified butter.
  • Sprinkle shrimp with salt and pepper and sliced garlic.
  • Place shrimp in oven and roast for 8 to 10 minutes until shrimp are pink and opaque.
