Hot Dog Fried Cauliflower Rice

Ok, I know this may sound a little weird but trust me, it is so good! I am always thinking of fast and easy one-pot meals to make that my entire family will love and this one checks all the boxes. It has hot dogs, which my kids love, and it is loaded with vegetables! I also love this meal because it can be eaten for breakfast, lunch, and dinner.

The hot dogs are the star of this Hot Dog Fried Cauliflower Rice. To make this I used Teton Waters Ranch Whole30 Approved Uncured Beef Hot Dogs. And please believe me when I tell you that these hot dogs are so amazingly delicious! I will never buy another hot dog brand again.

Now, I know what you are probably thinking, “hot dogs are not healthy.” And you’re right. Most hot dogs are full of terrible ingredients like: corn syrup, MSG, potassium lactate, and a ton of ingredients that I have no idea what they even are. But not Teton Waters Ranch hot dogs . Not only are they delicious, but they are made with clean ingredients. Ingredients are: Grass-Fed Beef, Water, Less than 2% of the following: Spices including Paprika, Sea Salt, Vinegar, Celery Powder, Garlic Powder, Cherry Powder, Onion Powder. I do not feel one ounce of guilt when feeding these hot dogs to my children or to my growing baby bump!

Hot Dog Fried Cauliflower Rice

Servings 4 servings

Ingredients
  

  • 1 8 oz pack of Teton Waters Ranch Grass-Fed Beef Hot Dogs, sliced
  • 1 tbsp of olive oil
  • 1 12 oz bag of frozen peas and carrots
  • 1 head of cauliflower, riced
  • 1 tbsp of sesame oil
  • 2 eggs, beaten
  • 1/4 cup of coconut aminos
  • salt and pepper
  • 4 green onions, sliced (for garnish)

Instructions
 

  • Add olive oil to a medium saute pan over medium-high heat. Add sliced hot dogs to pan and cook for 2-3 minutes. Next, add bag of frozen peas and carrots. This will bring down the heat of the pan so just continue to cook on medium-high heat and the heat will come back up, about 5 to 6 minutes. 
  • Once you hear the pan start to sizzle again, move the hot dogs, peas and carrots to one size of the pan. Add sesame oil to the empty side of the pan. Once hot add the cauliflower. Saute the cauliflower in the sesame oil for 1 to 2 minutes, then combine cauliflower with the remaining ingredients. Cook for another 5 minutes. 
  • Next, make a hole in the center of the pan and add the beaten eggs to the hot pan. Let cook until the eggs firm up. Once firm, incorporate the eggs with the rest of the cauliflower rice. 
  • Lastly, add coconut aminos to cauliflower rice and cook for an additional 3 to 5 minutes. Taste your cauliflower rice and add salt and pepper to taste.
  • Garnish with green onions and serve!
