Not Your Average Green Bean Casserole

Christmas is my absolute favorite holiday!

Growing up, my favorite day of the year was Christmas Eve. My family would throw the biggest Christmas Eve party ever! And when I say big, I mean big! There had to be over a hundred people that would show up to the party each year. I could be exaggerating but I really don’t think I am.

I have the best memories from those parties: opening presents with my cousins, eating homemade tameles that all my aunts and my mom made the day before, and listening to Charles Brown’s Please Come Home for Christmas.

I also remember one year my mom wanted to make something different so she decided to make a Green Bean Casserole. I had never tried one before, but from the way people responded to it I think Green Bean Casseroles have a bad rep. Out of all the food that night, the only thing left was the Green Bean Casserole. There was a little corner that was missing and that was because I tried some (it was really good to me by the way). No one tried it at all. Just me. I always make fun of my mom about that and she is probably going to be mad at me for sharing this story with all of you, but it’s so funny to me.

Well this casserole is Not You Average Green Bean Casserole. It is made with a creamy and cheesy sauce and it covered with Parmesan cheese and caramelized scallions. I guarantee if you make this for you Thanksgiving or Christmas dinner, you won’t have one bite left. It also happens to be keto and gluten-free.

Green Bean Casserole

Not Your Average Green Bean Casserole

Ingredients
  

  • 1 lb of fresh green beans, trimmed
  • 1 cup of heavy cream
  • 4 oz of cream cheese
  • 1 tsp of granulated garlic
  • 3/4 cups of grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 shallot, thinly sliced
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large pot, add enough water to cover the bottom of the pot.  Add green beans, salt and pepper to taste, and cover. Steam green beans for 10 minutes.
  • While green beans steam, make the cheese sauce. Add one cup of heavy cream to a medium sauce pan and heat over medium heat.
  • Once heavy cream is warm, add cream cheese and melt in.
  • Once cream cheese has melted, stir in 1/4 of a cup Parmesan cheese.
  • Stir in granulated garlic and and salt and pepper to taste.
  • Transfer steam green beans to a 9 inch baking dish and cover with cheese sauce. Make sure green beans are evenly coated with sauce.
  • Sprinkle remaining Parmesan cheese over the top of casserole. Place in preheated oven and bake uncovered until cheese is fully melted, about 20 minutes.
  • While the casserole bakes, add olive oil to a small pan and warm over medium-low height. Add shallots and saute until shallots are nice and caramelized, about 10 minutes. Make sure they don't burn.
  • After 20 minutes, turn your oven to broil and broil the top of the casserole until nice and brown, about 1 to 2 minutes. You have to be very careful during this step and watch your casserole because the broiler works very fast and it is easy to burn your food.
  • Remove casserole form oven and garnish with shallots. 
  • Serve and enjoy!
