I don’t know about you but sometimes I have no clue what to eat for breakfast. Breakfast is the meal that sometimes gets a little boring because I find myself eating the same things over and over.
Well bore no more! This Blueberry Breakfast Sausage is the perfect way to make your breakfast extra special. And they are Whole30 compliant and paleo friendly.
Blueberry Breakfast Sausage
Ingredients
- 1 lb ground pork, 80% lean 20% fat
- 1 egg
- 1 to 1 1/2 tsp of salt I use 1 1/2 tsp because I like mine on the saltier side
- 1/2 tsp of ground cinnamon
- 1/2 tsp of ground sage
- 1 cup of blueberries
Instructions
- In a large bowl, add the ground pork, egg, salt, cinnamon, sage and combine. Once combined, add the blueberries and fold into the pork mixture. Next, with your hands, take the pork and blueberry mixture and form nine individual patties.
- Heat a large skillet over medium heat. Once warm, add the sausage patties and cook for five minutes on each side or until internal pork temperature reaches 160 degrees F. Be sure to use a spatula to flip so you do not lose any blueberries.
