Watermelon Cucumber Salad

This Watermelon and Cucumber Salad is the most refreshing salad that you can have on a hot summer day. It’s cool, hydrating, and super easy to make!

My husband and I have really been into grilling and smoking meat this summer. It has been so much fun, but it’s a hot hobby! Having a salad like this helps to keep us nice and cool. This salad goes great with grilled chicken, ribs, shrimp, pretty much everything.

If you tolerate dairy, adding feta cheese takes this salad to the next level!

Ingredients
  

  • 1 small seedless watermelon, cut into 1-inch cubes
  • 3 cucumbers, peeled, sliced and halved
  • juice from 1 lime
  • 1/4 cup of mint, chopped

Instructions
 

  • Add watermelon and cucumber to a large bowl. Pour in lime juice and stir to combine. Lastly, sprinkle in mint. Refrigerate for at least an hour to let flavors combine.
