Chicken, Broccoli and Potato Sheet Pan Dinner

This is an easy and healthy dinner for two. It’s the perfect meal to make on a weeknight because it comes together quickly and doesn’t require a lot of effort. I also like to prepare it on the sheet pan to limit the amount of dishes.

I roast this sheet pan dinner for 35 to 40 minutes or until the chicken has reached a temperature of 165 degrees F. I am a huge believer in using meat thermometers. They are definitely worth the investment. I highly recommend using a meat thermometer when cooking chicken breast because you NEVER want undercooked chicken. However, it is very easy to overcook and dry out chicken breast. Having a meat thermometer will help to prevent both of these outcomes. I always use my meat thermometer to check the chicken’s temperature before removing the chicken from the oven. Be sure to stick the thermometer in the thickest part of the chicken breast to get the most accurate reading.

How I make this sheet pan dinner for two:

Preheat oven to 425 degrees F.

For the Chicken

Drizzle both sides of chicken breast with 2 tsp of avocado oil and massage into the chicken. Season both sides of chicken with salt, pepper, 1/2 tsp of granulated garlic, and 1/2 tsp of granulated onion. Place in the middle of the sheet pan.

For the Potatoes

Add potatoes to one side of sheet pan next to the chicken and drizzle with 2 tsp of avocado oil and season with salt, pepper, and 1/2 tsp of granulated garlic. Use your hands to massage potatoes and ensure potatoes are evenly coated with oil and seasoning.

For the Broccoli

Add broccoli to the other side of the sheet pan, drizzle with 1 to 2 tbsp of avocado oil and season with salt and pepper. Use your hands to massage the broccoli and ensure it is evenly coated with salt and pepper.

Add sheet pan to preheated oven and roast for 35 to 40 minutes, or until the temperature reaches an internal temperature of 165 degrees F.

  • 2 bone-In Skin on Chicken Breast
  • About 10 small red potatoes, quartered
  • 2 small heads of broccoli, cut into florets
  • 6 tsp of avocado oil, divided
  • 1 1/2 tsp of granulated garlic, divided
  • 1/2 tsp of granulated onion
  • salt and pepper

Instructions
 

  • Preheat oven to 425 degrees F.
  • For the Chicken
