Mexican Inspired Meatloaf

This Mexican Inspired Meatloaf is one of the best meatloaves you will ever put in your mouth. The intense flavor is so addicting that it makes you keep coming back for more.

Meatloaf can sometimes have a bad reputation, but when it is made right, it is absolutely delicious. Using flavors that are traditionally found in Mexican cuisine transforms traditional meatloaf into a south of the border treat the entire family will enjoy.

Mexican Meatloaf Ingredients

  • Ground Beef
  • Chorizo
  • Almond Flour
  • Tomato Sauce
  • Black Olives
  • Green Onions
  • Eggs
  • Granulated Garlic
  • Granulated Onion
  • Cumin
  • Chili powder
  • Salt and Pepper

How to Make Mexican Inspired Meatloaf

  • Step one: Preheat oven to 350 degrees Fahrenheit. 
  • Step two: In a medium bowl, add ground beef, chorizo, almond flour, tomato sauce, olives, 1/2 cup green onions, eggs, granulated onion, granulated garlic, cumin, chili powder, and salt and pepper. Use your hands to mix ingredients together until well combined. 
  • Step 3: Add meat mixture to a baking sheet and form into a loaf. Cover meatloaf with 1/4 a cup of tomato sauce. Bake meatloaf for 45 minutes.
  • Step four: After 45 minutes, remove meatloaf from oven and cover meatloaf with the remaining 1/2 cup of tomato sauce. Place meatloaf back into the oven and bake for an additional 15 minutes.
  • Step five: Remove meatloaf from oven and let rest for at least 10 minutes before cutting into it. 
  • Step six: Garnish with remaining 1/2 cup of green onions. Serve and enjoy!

Ingredients
  

  • 1 & 1/2 lbs of ground beef (I used 80/20)
  • 1/2 lb of ground pork chorizo
  • 1/2 cup of almond flour
  • 1 cup of tomato sauce, divided
  • 1 2.25 oz can of sliced black olives
  • 1 cup of green onions, diced, divided
  • 2 eggs
  • 1 tsp of granulated garlic
  • 1 tsp of granulated onion
  • 1 tsp of cumin
  • 1/2 tsp of chili powder
  • salt and pepper to taste

  2. I'd been craving meatloaf for a couple of weeks. Rather than make my traditional meatloaf, I decided to spice up my Monday night with this Mexican Meatloaf. Thankfully, I keep chorizo in my freezer. This meatloaf came together flawlessly and in a matter of minutes. In all my years of living, I have yet to see a beautiful meatloaf or anyone describe meatloaf as beautiful. However, I have had '"damn good" meatloaf, and this Mexican Meatloaf tops that list.

  3. 2 Person Houses! Read this warning: cut the recipe in half or only make it with company. If you make as directed, you’re going to be tempted to eat a pound of meatloaf each. It’s sooo good!
